As in cooking, chocolate-making is all about precision. Yannick Alléno brings to the craft the techniques that have shaped his Modern Cuisine, from extraction and fermentation to cryoconcentration. It is the natural extension of a deeply held conviction: "Sauce is everything." These techniques allow him to concentrate flavors and bring ingredients into dialogue until the perfect balance is achieved.
Balance also lies at the heart of each creation, with every bite unfolding through a subtle sequence of contrasting textures. Beneath the crisp shell of the sticks, the praline is deliciously smooth. Elsewhere, cocoa meets the velvety richness of caramel, the freshness of lime or the delicate salinity of fleur de sel. Each flavor takes center stage, expressing its full intensity while remaining part of a harmonious whole.
A favorite ingredient of the world's most Michelin-starred chef, vanilla has occupied a central place in the Maison's repertoire since its creation. One of its emblematic creations, La Gousse de Vanille, echoes the shape of the pod itself, combining ganache and vanilla caviar in a subtle trompe-l'œil.
Le Noël Vanille
Entitled Le Noël Vanille, the 2026 collection brings together an Advent calendar, a Vanilla Tree designed for sharing, a Dark Vanilla Bar and vanilla praline sticks. Aerated praline, Isigny cream caramel, lime-zest marshmallow and pieces of Breton shortbread allow the spice to shift in both texture and expression. At times enveloping, at others more vibrant, vanilla plays against the depth of dark chocolate or is lifted by a delicate saline note.
Form responds to flavor, becoming a creative playground in its own right. The tree takes its shape from a bundle of vanilla pods, while the dark chocolate bar echoes their interlacing lines. This sophistication sacrifices none of the emotion, as beneath the precision of each pairing lies the undiminished magic of childhood memories.
